Fruit Filled Oatmeal Bars

Preheat oven to 350
1 cup AP flour
1 cup quick cook oats
2/3 cup brown sugar
1/4 tsp baking soda
1/2 cup butter or solid oil e.g. palm or coconut


1 recipe for filling or
1-1/2 cups of your choice filling (pie filling consistency)

Blend flour, oats, sugar, soda; cut in butter or solid oil.
Set aside 2/3 cup.
Press remaining into square pan.
Top with filling.
Sprinkle on the 2/3 cup crumb mixture.

Bake 30 minute or until golden brown.

Let cool

Filling Recipes

Apple-Dried Berry
1 cup applesauce
2/3 cup dried cranberries or other dried berry
1/2 tsp cinnamon
dash of cloves (omit depending on fruit used)
vanilla or almond extract


Dried Fruit
In saucepan over med high heat:
1 cup snipped dried fruit
3/4 cup water
Bring to boil, reduce temp., cover, simmer for 5 minutes
meanwhile combine;
1/4 cup sugar
2 tsp corn starch or arrowroot
stir into fruit, cook and stir 1 minute
until thick and bubbly.
add extract according to fruit.

Approx 22 bars 11o calories per bar, 4 g fat, 18 g carbo, 1 g fiber
