Swedish Dinner Rolls

Girls, remember when you used to go to Betty's house for 4-H baking? Here is her Swedish Dinner Roll recipe. If you have a cute story about baking with Betty you should put it in a comment on here. I know there are lots of stories, so I expect at least two.


4-1/2 tsp. yeast
1/2 c warm water
2c warm milk
3/4c sugar
1-1/2 tsp salt
1/2c butter
2 eggs
6-8 drops anise extract
4c flour
+ 3-4 cups more flour

In a large prewarmed mixing bowl dissolve yeast in the warm water.
Mix together warm milk, sugar, salt, butter, eggs, and anise.
Add to yeast mixture, and 4c flour. Beat well.
Begin adding the rest of the flour one cup at a time, until the dough is perfect.
Knead until smooth and elastic. Form a ball, place in warm oiled bowl, turning the dough to oil all around, cover with a cloth and set in warm place until dough doubles.
Punch down dough and let rise second time.
Punch down and using an oiled counter form into desired shaped rolls, place on a oiled 11x17 baking sheet (jelly roll pan type) let rise until nearly double.
Bake at 325 degrees for 12-15 min. or until nicely golden brown. Makes 48 rolls, just enough for about four people!

    Well I can't reamember any particular stories right now, but I do remeber we would always stop paying attention to the mixing or needing that we were doing and start doing something silly, Because she would always come over and say "what are you doing?" then we would snap back to reality and try to think of some good reason we were doing whatever it was we were doing (like patting it cause it was like a baby)And she would always give a little giggle and walk away shaking her head.
